Air Fryer Chicken Fajita Wraps

By Esther Lackie

Some of my favourite meals start with simple ingredients and turn into something really delicious. For these chicken fajita wraps, I cooked strips of chicken breast with fajita seasoning, colourful bell peppers and onions, then tucked everything into tortillas with mayonnaise and mozzarella. A quick finish in the air fryer gave the wraps a lovely golden, crispy exterior, with plenty of flavour and melted cheese inside. I served mine with homemade guacamole and lime wedges.

Approximately 6 medium wraps

Ingredients

  • 500 g chicken breast, sliced into strips
  • 2 tablespoons chicken fajita seasoning
  • A drizzle of olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium white onion, sliced
  • Fresh coriander, chopped, quantity to taste

  • Store bought mayonnaise, quantity as needed for spreading
  • 12 slices mozzarella cheese, 2 per wrap
  • A little butter, for brushing
  • Homemade guacamole, to serve
  • Lime wedges, to serve
  • Fresh coriander, to serve

Method

  1. 01

Heat a drizzle of olive oil in a frying pan over medium heat.

  2. 02

Add the chicken breast strips and cook for approximately 6 to 7 minutes, allowing them to brown slightly.

Add the sliced red, yellow and green bell peppers and the medium white onion.

  2. 05

Continue cooking, stirring occasionally, until the chicken is fully cooked and the vegetables have softened. The total stovetop cooking time is approximately 20 minutes. Ensure the chicken is thoroughly cooked before serving.

  3. 06

    Stir in fresh chopped coriander.

Lightly brush the outside of each wrap with butter.

  2. 12

Arrange the wraps in the COSORI Dual Blaze air fryer, leaving enough space for air circulation. Cook in batches if necessary.

  3. 13

Select AIR FRY at 190°C and cook for 5 minutes, without preheating or flipping, until the tortillas are lightly golden and crispy and the cheese has melted.

Lackie's Notes

The chicken filling is cooked on the stovetop before the wraps go into the air fryer.

The air fryer is used to crisp the tortillas and melt the cheese, not to cook raw chicken.

Three wraps were made during the photographed cooking session, but the filling is estimated to make approximately six medium wraps.

The exact amount of mayonnaise, butter and fresh coriander was not measured.

Air fryer performance can vary. Check the wraps towards the end of cooking.
